Whole Wheat Zucchini Quiche

Ingredients

1 pie crust, baked
1 1/4 cups cooked wheat--see note for instructions
2 eggs
1 egg yolk
1 cup peeled, cooked, and mashed zucchini
1 1/2 cups milk
1/2 teaspoon salt
8 ounces cheddar cheese, shredded

Directions

Preheat oven to 325 degrees Fareheit. Line bottom of crust with cooked wheat. Combine remaining ingredients and pour on top of wheat. Bake for approximately 40 minutes. Serves 6. Note: to make cooked wheat follow the directions below. 1 cup Bronze Chief or Prairie Gold whole wheat berries 3 cups of water Combine water and wheat, cover, and let sit over night or approximately 12 hours. Do not drain. Bring to boil for 5 minutes and let simmer for 30 minutes or until tender. Store in freezer for up to year. 1 cup wheat = 2 cups cooked wheat.
