Irish Soda Bread
This recipe serves 8 people. Because this recipe is for a particular size pan, serving size adjustments are only in multiples of 8.
2 cups Natural White all purpose flour
1 cup Prairie Gold whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1/4 cup unsalted butter, softened
1/2 cup light molasses, or sorghum
1/2 teaspoon vanilla extract
1 cup raisins
2 teaspoons caraway seeds
1 1/2 cups buttermilk
Preheat oven to 350 degrees. Butter an 8 inch round baking dish and set aside. Sift first 4 ingredients together in a food processor or bowl. Add butter and process until mixture resembles coarse meal.
Add molasses and vanilla and mix thoroughly. Add raisins, caraway and buttermilk and process until mixture is evenly moist. Do not overwork. Transfer dough to a floured work surface. Knead one minute, adding extra flour to keep dough from sticking.
Shape into a ball and transfer to buttered baking dish. Cut an "X" in the top with a sharp knife. Brush top of bread with milk.
Bake 1 hour. Transfer to a wire rack to cool completely before slicing.
