Flax Seed Muffins

Ingredients

1 1/4 cups Natural White Flour
3 cups ground flax seed
1 tablespoon baking powder
1/3 cup light molasses, may add up to 1/2 if desired
3/4 cup skim milk
2 tablespoons canola oil
1/2 cup liquid egg substitiute

Directions

Preheat 350 degrees Farenheit. Whisk together flour, flaxseed, and baking powder. In a separate bowl, stir together remaining (wet) ingredients until just moistened. Scoop into a 2 3/4-inch muffin pan coated with vegetable spray. Bake until done, about 18 minutes. Makes approximately 12 muffins.
