In our Church, the recipe for bread for use as Holy Communion MUST follow strict guidelines. Here is the recipe: Whole Wheat flour, water, yeast and salt. There are NO other ingredients. You can imagine then that the taste of the wheat is distinct and only possibly affected by the yeast. Since I personally make it, I use white whole wheat and for many, many years, Prairie Gold. I didn't however appreciate it until I tried other brands just out of curiosity. Every brand I have used, leaves a slightly bitter aftertaste. If you don't believe it, try it. Prairie Gold finishes sweet. I don't need to tell you what whole wheat bread made without any conditioners such as milk, oil, eggs, sweeteners, etc. is like. Here is the litmus test of Prairie Gold. The excess bread make for Holy Communion (but not used) is only a small portion and almost always taken by the children. Remember, the recipe is only white whole wheat, water, yeast and flour. When I switched away from Prairie Gold, the children would only eat one piece and leave the rest. When I retured to Prairie Gold, they eat it all. Thank you for your fine products.
