Blueberry Sour Cream Muffins
Delicious take on Blueberry Muffins! Recipe from Grandma Wight in Loma, CO.
Ingredients
4 eggs, beaten
2 cups sugar
2 cups blueberries
Dry mixed together:
4 cups Natural White Flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
Wet mixed together:
1 cup vegetable oil
2 cups sour cream
1 teaspoon vanilla
Directions
Gradually add sugar to the beaten eggs. Alternate small portions of the wet and dry mixtures to the eggs slowly, do not over mix.
Fold in blueberries. Spoon into muffin tins 3/4 full. Bake in 400 degree oven about 20 to 25 min.
Makes about 24 muffins.
