Honey Wheat Muffins
These are light and lemony.
1 1/2 cups Wheat Montana Prairie Gold flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup canola oil
1 beaten egg
1/2 cup milk
1/2 cup honey
1 tablespoon finely shredded lemon peel
Variation: add 1/2 cup shelled sunflower seeds to the flour mixture; for cheese muffins - add 2 cups shredded sharp cheddar cheese and omit lemon peel.
Place all ingredients in mixer and mix until just moistened.
Line muffin tin with baking cups; fill 2/3's full. Bake at 375 degrees about 15-20 minutes, depending on the size of the muffin tins. Makes 12.
