Wet Bottom Shoofly Pie
Ingredients
1 cup Natural White flour
2/3 cup brown sugar
1 tablespoon butter
1 cup dark Karo syrup or mild flavor molasses
3/4 cup boiling water
1 egg, beaten
1 teaspoon baking soda
1 9-inch unbaked pie shell
Directions
Preheat oven to 375 degrees. Combine and mix the flour, brown sugar, and butter. Reserve 1/2 cup of this crumb mixture for the topping. To the remaining crumbs, add the molasses, boiling water, egg, and baking soda; mix well. Put the molasses mixture into the unbaked pie shell. Sprinkle the 1/2 cup of reserved crumbs on top. Bake for 10 min. in a 375 degree oven, then reduce heat to 350 degrees and continue baking for 30 min. Cool on rack. Serves 8.
